The Leidenfrost effect
The Leidenfrost effect is when the vapour produced by the surface of a liquid boiling insulates the liquid. It causes the skittering of water droplets over a hot surface. You can see experiments on YouTube where people dip their hands in molten lead without getting burnt. My question is: why doesn't this work with hot oil?
